The "eastern side" of the Keihin-Tohoku Line, from Akihabara Station to Akabane Station, is truly an amazing place, and "karashi-yaki" is a dish that originated in that very "eastern side."

At first glance, it looks like a stew, but it's completely different. It might seem like mapo tofu, but it's entirely different. "One of a kind"?that's "karashi-yaki"!

The process of making karashiyaki is roughly as follows: stir-fry the pork, remove it, stir-fry the tofu in the same pan, return the pork, season with sauce and garlic, and finally garnish with sliced ??green onions and cucumber.

The contents of the sauce are likely a closely guarded secret passed down from father to son at each restaurant.

And the amount of grated garlic added after the sauce is incredible; just looking at it makes you think something amazing is about to happen.

Furthermore, the addition of chili powder, ginger, and a "secret spice" creates the unique "Higashi-Jujo flavor," where sweetness, spiciness, and umami are beautifully and harmoniously combined! @(Nihedon @ KesaranPasaran Lab)
